Welcome to the intimate world of Uncork Wine Bar, where life is all about fine ‘wining’; a place to cozy up this winter exploring the world through exceptional wines and great food. With 300 different bottles of hand selected, individually tasted wine customers can enjoy a wonderful night with an added bonus of the classic Swiss Emmental, Gruyere and Vacherin cheese Fondue to accompany the wines.
By day, Uncork daylights as a specialist wine retailer and then from 5pm, the corks pop (metaphorically) and bottles begin to pour as it transforms its earthy wooden space with candles, low lighting and background lounge jazz into a real wine bar. It has an otherworldly feel, it is classy, accommodating; it celebrates great wine and wishes to share the experience with its customers. Tucked away behind a main road, Uncork is quaint, sitting up to 20 people inside and another 50 or so outside. Although drop-ins are ok, reservations really are a must. Once inside, there’s something so comforting, intimate and very personal, a real sense of professionalism, delicacy and good taste. The staff are well trained on the art of wines and help you choose a glass or bottle to suit your taste.
The bar’s size, gives it the extra magic ingredient, it is small but has a front wall made of glass, high ceilings and lots of natural wood and cork. To the sides of the room, the walls are lined to the ceiling with award winning wines. Black metal ladders slide across the room, to help find the tipples of choice. Each bottle has been researched, tasted and selected by the owner and I was pleasantly surprised to discover the affordability of these highly acclaimed wines.
The wine menu changes every month to suit the seasons and to give the customer an opportunity to discover tastes. Feel free to choose something from their collection that’s not on the month’s list, just peek around the shop, choose a bottle and with a €7 corking fee, the wine is yours. You don’t need to be a wine connoisseur to go but you may certainly develop a taste for it. There’s a small selection of cocktails and beers but I ordered two full bodied reds. Not only was I not disappointed but I believe my cocktail days maybe (briefly) over.
The smells were intoxicating; rich, subtle, earthy, peppery and deep, just inhaling the aromas was a fulfilling enough experience. Then came the tastings: Ramon Bilbao Crianza Tempranillo from Rioja in Spain is a 100% Tempranillo grape variety and a classic Spanish old world wine, it’s combination of freshness, depth and light aroma pleased, however, the 2013 Argentinian Malbec won my heart. A deep and rich experience.
Uncork is a firm favourite in my book, it’s a wonderful place to explore superb wines, home made paella (which needs to be pre-booked) and dreamy memories.
