Knowing which dishes to pair with your wine can make a world of difference. It is incumbent on any passionate wine connoisseur to know which food brings out the flavours of each wine variety in a balanced manner.
Cyprus, with its hills draped in vineyards, has no shortage of local wine, and the new contemporary winery of Oenou Yi – Ktima Vassiliades aims to reflect on Omodos village’s wine-making culture with an upcoming event.
Located in picturesque, traditional Omodos village, the winery has teamed up with Londa Beach Hotel to contribute to the history and continuity of Cyprus wine production. It is the glorious heritage of the vineyards that inspired Londa’s executive chef Vassos Michael to craft a delectable menu around a selection of Oenou Yi – Ktima Vassiliades’ fine wines for the wine-pairing event on February 8.
Starting at 8.30pm with a cocktail reception at Caprice Lounge Bar, guests can sample the ‘White Dry 2017’ an aromatic Xynisteri variety ‘secret blend’. At 9pm sharp, “a culinary journey will unfold” with a four-course dinner.
The first course will feature fish served with Mediterranean sauce, paired with a ‘Xynisteri 2017’, striking a delicate balance between its sharpness and velvety texture.
The second course, which will be paired with a ‘Rosé 2017’ will be a risotto with prosciutto, flavoured with truffle oil, garnished with parmesan. For the main course, guests will enjoy a fillet of veal wrapped in a polenta and fresh herb mix, paired with ‘Geroklima’ (Greek for ‘old, strong vine’).
The meal will finish with a decadent Trilogy of Chocolate, paired with the evocative aroma of ‘Xynisteri Malaga 2016’, a sweet wine of great purity and elegance on the palate. Over the course of the evening, Ms. Katerina Mylona, Oenou Yi – Ktima Vassiliades’ senior oenologist, will elaborate further on the wine selection on offer.
