TGIF: light and sinful Tres Leches cake

Here at Good Living, we like to mark the end of the working week with a TGIF recipe… A little note of indulgence with which to treat yourself over the weekend, hopefully catching your breath as you cook, bake or mix something that’s a tiny celebration.

In this video, cookbook author and YouTube chef Donal Skehan shows us how to make a sinful Tres Leches cake that is sure to disappear shortly after it’s baked!

Translated to ‘three milks’ from the Spanish, Tres Leches is a sponge cake – in some recipes, a butter cake – soaked in three kinds of dairy: evaporated milk, condensed milk and heavy cream.

When butter is not used, it becomes a very light cake, with many air bubbles, and this distinct texture is why Tres Leches does not have a soggy consistency, despite being soaked in its three-milk mixture.
