The star spice that really lights up these easy-skillet goodies, is Ras el Hanout – a spice mix found in Tunisia, Algeria and Morocco. The name in Arabic means “head of the shop” and implies a mixture of the best spices the seller has to offer.
These ground-meat marvels should take under 10 minutes to assemble, and are fabulous served either as a platter with a refreshing carrot salad, or in pitta pockets, topped off with yoghurt or tahini.
