30-minute Spanish cod with cinnamon

In this video, Albert Bevia of the Spain on a Fork YouTube channel teaches us a quick and easy fish recipe that dates back at least 700 years.

Inspired by the 722-1492 Moorish occupation of the Iberian peninsula, Spanish cod with cinnamon delivers an incredible range of flavours, thanks to the perfect combo of the delicate fish and fragrant spice.

And, even though they where not available in Spain until the 16th century, the dish throws in some green bell peppers, too, as their slightly bitter flavour acts as a wonderful counterpoint to the cinnamon.

So… ready to give the dish a try yourself? Your taste buds – as well as any lunch/dinner companions – will certainly appreciate it!
