Laksa is a rich, spicy comforting noodle soup found in many parts of Southeast Asia, including Singapore, which is the country of origin of this video’s host, Food52’s Brinda Ayer.
The broth is typically made with shrimp paste, but this version, taken from Meera Sodha’s cookbook EAST, is vegan, packing plenty of flavour with its slowly-cooked paste of aromatics, fresh herbs and chilli.
