Savoury spinach and pine nuts empanadas, known in Spain as ‘panadons de Lleida’, are easy to make, come packed with great flavours and require simple ingredients.

As their name suggests, these empanadas are native to the Catalonian province of Lleida in Spain. They are typically served during Easter, but have become so popular that they are now enjoyed all-year-round.
