Smoky, creamy Lebanese Baba Ghanoush

This Lebanese-inspired Baba Ghanoush has only four ingredients: oven-roasted eggplant, lemon juice, tahini and garlic, and offers a great alternative (or additional) dip, to hummus to get your appetite going.

Also, for those with particular nutritional concerns, it’s vegan, gluten-free and keto-friendly… so, go ahead and whip it up in five minutes and enjoy!


  • 1 large eggplant
  • ¼ cup tahini
  • 3-4 tablespoons lemon juice
  • 2 garlic cloves
  • ¼ teaspoon salt
  • Olive oil,
  • Parsley,
  • Pomegranate for garnish
