In this playful episode from Food Network’s ‘Worst Cooks’ series, American chef and TV personality Carla Hall puts cooking newbies through their paces by teaching them (and us) how to make orecchiette with lamb and mint pea pesto.

A note about the pasta:

Orecchiette are a pasta shell typical of Apulia, a region of southern Italy. Their name comes from their shape, which resembles a small ear. They’re made with durum wheat, or, as in this example, semolina, and water. Eggs are rarely used.

The dough is rolled, then cut into cubes. Each cube is pressed with a knife, dragging it on the board and making it curl. The shape is then inverted over the thumb.
