Spanish rice and beans, with peppers and paprika

In this video, Albert Bevia of the Spain on a Fork YouTube channel teaches us how to make a mouthwatering ‘Empedrado Murciano’, or Spanish vegetable and bean rice. It’s a simple dish that’s easy to prepare, yet packed with flavour.

Bevia’s recipe uses Spanish round rice, but you can use any type of rice you prefer – simply check the package instructions to ensure you use the right rice-to-liquid ratio.

This is a very typical rice dish from the region of Murcia in southeast Spain, where most of the country’s vegetables are grown, hence its emphasis on greens, rather than meat. Yet the more carnivorous should definitely stay open-minded, as there is truly no lack of deliciousness, here.

Give it a try, and perhaps make a little extra – this dish is sure to disappear fast!
