Simple but delicious ingredients
Having scanned our phones for somewhere to eat while on holiday in Limassol we came across The Seablings that specialises in pizza. Who doesn’t like pizza? On the Limassol seafront, Seablings is a small shop with a very modest and simple sign so we nearly missed it. There are only a few tables. No sooner had we perched ourselves on the stools than a friendly-looking young gentleman appeared and told us to view the menu we would have to look at a delivery app.
It turns out that the young gentleman who greeted us, is the owner of Seablings and has trained as chef in London. His philosophy is to use the best ingredients so that even the simplest of foods can be done to a high standard. And of course, given the name, he opened it with his brother.
And some of the pizzas on the menu were quite different; the Pumpkin Pizza was very intriguing. The Spicy Pepperoni grabbed my attention because one of the toppings was fermented mango honey! The Garlic Burrata, Zesty Mushroom, Sweet and Spicy all looked good too. As did the special of the day; The Anchovy Special. It was topped with Burrata, lemon zest, garlic oil, oregano and, of course, anchovies. It sounded so good we wanted a piece of everything.
We decided to go for: Pumpkin; Sweet and Spicy; Spicy Pepperoni; Zesty Mushroom and the Anchovy Special. Plus a starter of Zig-Zag, which is their take on garlic bread. It’s essentially pizza dough topped of garlic olive oil, parmesan and black pepper. We were thrilled to notice Aperol spritz on the menu so, we each ordered one of those as well.
As we were waiting, it started to get dark and all of a sudden these charming coloured lights overhead came on and a candle was lit on each table. We had entered a very basic dining area by day which was then transformed to a delightful dining area by night!
The Zig-Zag came out and we each tore off a piece. First thing we noticed, as we were tearing off our pieces was just how fluffy the dough was! Warm, soft and just the right amount of garlic with the taste of the parmesan cheese, it was a very enjoyable starter.
The pizzas were laid out in front of us, I went straight for the spicy pepperoni. Alongside the fermented mango honey, there was also pickled onion on the pizza! Strange but it really did work! However, just like with the Zig-Zag, the dough was the star of the show. The verdict on the Anchovy Special? The fish do not steal the show but provide a perfect salty complement to the other toppings. All the pizzas were just so good and I surprised myself when I nominated the Pumpkin Pizza as my favourite. The odd crunch of a pumpkin seed in the cheesy texture combined with the sweetness of the pumpkin and mascarpone cheese was a combo that gave a real ‘mmmm’ moment.
I’d like to say that I would go again but, I already have… twice! Edward was just as friendly each time and the pizza was just as delicious.
