Vegan Orange Cupcakes

125g all-purpose flour

75g sugar

½ teaspoo baking powder

1 pinch Himalayan salt

125g fresh orange juice

40 ml vegetable oil

1 teaspoon orange zest

½ tablespoon apple cider vinegar

1/2 tablespoon brandy

1 teaspoon vanilla

1/2 teaspoon baking soda

For the glaze (optional)

100 g icing sugar, mixed with 5 tablespoons fresh orange juice

Prepare 6-8 silicone molds for muffins. Lightly grease them and sprinkle them with white sugar.

Preheat oven to 180C.

Prepare two medium bowls with ingredients: Sift the flour in one bowl. Add the sugar, baking powder and salt inside. Mix well. In the other bowl add the orange juice, vegetable oil, orange zest, apple cider vinegar, brandy, vanilla and baking soda. Stir with a whisk so that the soda foams.

With quick movements, combine the bowl with the flour and sugar along with the bowl with the wet ingredients.

Place the mixture into the tins and bake at 180C for 20-22 minutes.

Let them cool for 10 minutes and take them out of the pan.

Carefully place the cakes on a serving plate.

Drizzle with the glaze and serve.

Healthy Truffles

125g raisins, dried berries or dates

100g muesli

75g carob syrup or molasses (grape syrup)

50g nuts (such as walnuts, almonds and Brazilian nuts)

1/2 teaspoon orange zest

To garnish

Sifted cocoa powder

Place the sifted cocoa in a small deep container or baking dish.

In a food processor add all the ingredients of the recipe. Grind well until you get a uniform mixture.

Then shape the truffles into balls (35g) between your palms.

Place all the truffles in the baking pan and shake slightly until they are covered by the cocoa.

Freeze in the refrigerator for half to an hour and serve.

Strawberry Gelato buns

100ml whole milk

50g sugar

20 ml Limoncino cream or other liquer

1/2 tsp (5 g) xanthan gum

250g frozen strawberries

For garnish and serving

Brioche buns

Finely chopped pistachio

Cut the brioche loaves in half and onto a hot nonstick pan and toast them lightly.

Add all the ingredients to a blender (food processor) and grind well.

Using a spoon, place the popsicle between the brioche loaves and garnish with pistachio.
