Classic Fettuccine Alfredo: silky, starchy, buttery (and no cream)

In this video, Bon Appétit food editor Carla demonstrates how to make a classic Fettuccine Alfredo… with absolutely no cream involved in the recipe.

Fettuccine Alfredo or fettuccine al burro ‘fettuccine with butter’ is an Italian pasta dish of fresh fettuccine tossed with butter and parmesan cheese. As the cheese melts, it emulsifies the liquids to form a smooth and rich sauce coating the pasta.

Follow along, and you’ll be rewarded with all of the silky starchiness that the dish is rightly famous for.

Buon appetito!
