‘Jerk’ refers to a style of cooking in which protein or vegetables are marinated in spices and cooked over a grill, traditionally composed of green pimento wood.
The term ‘jerk’, similar to the word ‘jerky’, comes from the Spanish word ‘charqui’, referring to dried pieces of meat. In the Caribbean, this later adapted to ‘jerking’ a protein, meaning to poke holes in the meat so that spices infused into it with ease. Thus, ‘jerking’ anything requires marinating it, then cooking it over an open fire.
