Vibrant Rice Paper Rolls with Peanut Butter Sauce

Easter fast or looking for a light vegan option, or simply craving something packed with fresh vegetables, these Rice Paper Rolls are an absolute powerhouse of vitamins, healthy fats and flavour.
They are incredibly fun to make, easily customisable, and the peanut butter sauce ties it all together beautifully!
Serves four as a starter/snack, or 2 people as a main meal.
For the Veggie Rolls:
8 rice papers
Lettuce
1 cucumber
2 medium-sized carrots
Fresh basil
Fresh coriander
2 spring onions
1 cup wakame seaweed
1 avocado
1 bell pepper
Edamame beans
For the Peanut Butter Sauce
3 tbsp peanut butter
2 tbsp water
1 tbsp soy sauce
Prep the Veggies: Wash and carefully cut all of your vegetables (cucumber, carrots, spring onions, avocado and pepper) into thin, even matchsticks. Pluck the fresh basil and coriander leaves from their stems and wash the edamame beans.
Prepare the Water Station: In a wide, shallow bowl or dish, add warm water.
Soak the Wrappers: Submerge a dry rice paper wrapper into the warm water for just a few seconds until it becomes soft and pliable.
Assemble: Carefully lay the softened rice paper flat on a plate or a clean cutting board. Start adding your veggie matchsticks, a bit of lettuce, wakame seaweed, edamame and fresh herbs right in the centre. Don’t overfill!
Fold and Roll: Fold the left and right sides of the rice paper inwards over the vegetables. Then, take the bottom (or top) edge of the rice paper, pull it tightly over the veggies, and roll it all the way up until the vegetables are completely sealed inside.
Mix the Sauce: In a small bowl, whisk together the peanut butter, water, and soy sauce until smooth and creamy. If your peanut butter is very thick, add a tiny splash more water until you reach your desired consistency.
Serve: Dip your fresh rolls into the peanut butter sauce and enjoy!
