Quick and Easy, Stuffed Bell Peppers

Whatever the weather, stuffed peppers for lunch or dinner are always a winning combo. This is a dish that’s easy to make, healthy, filling and provides ultra-delicious leftovers.

Here, evolutionary design plays as big a role as tastiness. When bell peppers are sliced in half they become the perfect vegetable to stuff with a variety of ingredients. They’re firm enough to hold their shape while cooking, and yet soft enough to slice up with the filling, for a self-contained, complete meal.

The classic version of the dish features ground beef, garlic, onions, tomatoes, spinach and rice, but it is just as tasty without the meat, for those preferring a vegetarian option.
