‘Dolmeh Barg Mo’ – Iranian stuffed grape leaves

(Parental advisory: the Munchies YouTube channel hosts are known for their playfulness and occasional use of profanity, so please view without little ones around.)

In this video, Munchies executive culinary director Farideh Sadeghin teaches us how to make ‘Dolmeh Barg Mo’, or Iranian grape leaves stuffed with a savoury beef and rice filling, from her home kitchen.

The filling is made by first cooking aromatics like scallions, garlic, and onions, before adding ground beef, split green peas, basmati rice, and spices like saffron and cinnamon. Once the filling is ready, it’s rolled up into grape leaves, and steamed with a lemon juice mixture, resulting in a vibrant, addictive, handheld snack.
