Confit Byaldi: a modern take on classic Ratatouille

Ratatouille is a masterpiece of French cuisine. It’s essentially a French Provençal stewed vegetable dish, originating in Nice, also sometimes referred to as ‘Ratatouille Niçoise’.

Recipes and cooking times differ widely, but common ingredients include: tomatos, garlic, onions, courgettes, aubergines, capsicum, and some combination of leafy green herbs common to the region.

In this video, we will learn a modern variation on Ratatouille, known as ‘Confit Byaldi’.
