Gordon Ramsay’s cheesy springtime pasta dumplings (gnudi)

In this video, chef Gordon Ramsay demonstrates a beautiful dish, bursting with the flavours of the season: ricotta gnudi dumplings accompanied by colourful spring vegetables.

Unlike gnocchi, found in several regions of Italy, gnudi are prepared primarily in Tuscany. They’re also generally a bit larger than gnocchi and, instead of potato, are traditionally made with just ricotta, or ricotta and spinach, and semolina.

They are also mouthwateringly good, so if you’re planning to share, be prepared to see them vanish pronto!
