Broccoli, Feta and Halloumi Pie with Filo Pastry

This wonderfully simple broccoli, feta and halloumi pie requires no special pie dish, as it uses a humble baking tray and is as rustic as they come.

The filo pastry is the real time-saver here, as all it requires is a little brushing of butter to create crispy, flaky layers of pastry. It is such a great staple to keep in the fridge or freezer, perfect for any immediate pie cravings.

The pie itself tastes amazing served hot from the oven, but it is equally delicious warm, or even fridge-cold.
